Ingredients

3 very ripe bananas, mashed
1+ 1/4 cups Arrowhead Mills 1:1 GF flour
3/4 cup oat flour (make your own using these oats, or buy oat flour)
1/2 cup coconut sugar
1/2 cup ghee, melted
2 eggs
3 tbsp A2 sour cream(can swap for plain, full-fat yogurt)
1 tsp vanilla extract
2 tbsp ground flaxseed
3 tsp shatavari powder
2 tsp Ceylon cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
Chocolate chips (optional)

Directions

Step 1: Add all ingredients into one bowl

  1. Preheat oven to 350°F. Grease or line loaf pan.

  2. Mash bananas in large bowl.

  3. Mix in sugar + melted ghee.

  4. Add eggs, sour cream, vanilla; stir smooth.

  5. Add all dry ingredients directly into bowl.

  6. Fold gently until just combined. Add in chocolate chips if desired. 

  7. Rest batter 10 minutes (Don't skip this!)

Step 2: Bake

  • 350°F for 20 minutes

  • then reduce to 325°F and bake another 35–45 minutes

Step 3: Enjoy!

Make sure to let the banana bread cool completely before slicing into.

Storage:

Store banana bread in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days.


To freeze, allow the loaf to cool completely, then wrap tightly and freeze for up to 3 months. For easy postpartum snacking, slice before freezing and store individual portions in a freezer-safe bag. Thaw at room temperature or warm gently in the oven before serving.

How to use (dosing):

  • Enjoy 1-2 slices/day.
